Ingredients

  • 2 pounds cooked corned beef, cubed
  • 2 tablespoons fresh parsley, chopped
  • ½ teaspoon ground black pepper, or to taste
  • ¼ teaspoon dried thyme leaves
  • 1 pinch salt, to taste

Directions

  • Melt the butter and olive oil in a large skillet over medium heat.
  • Add the chopped onion and cook, stirring occasionally, until lightly browned, about 8 minutes.
  • Stir in the cubed potatoes and shredded carrot. Cook, stirring occasionally, until the vegetables are tender, about 15 minutes.
