Ingredients
- 2 cups cold cooked rice (day-old rice works best)
- 8 ounces boneless pork loin or cooked leftover pork, diced
- 2 tablespoons vegetable oil
- 2 large eggs, beaten
- 2 green onions, sliced
- ½ cup diced carrots
- ½ cup broccoli florets, chopped into small pieces
- ½ cup frozen peas
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
- ¼ teaspoon black pepper
- Salt, to taste
Directions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the diced pork and cook for 4 to 5 minutes until browned and cooked through. If using leftover pork, cook just until heated. Remove from the pan and set aside.
- Add the remaining oil to the skillet.
- Pour in the beaten eggs and gently scramble until fully cooked. Transfer them to the plate with the pork.
- Add the carrots and broccoli to the skillet. Stir-fry for about 3 to 4 minutes until they begin to soften.
- Stir in the garlic and ginger and cook for 30 seconds until fragrant.
- Add the cold cooked rice, breaking up any clumps with a spatula.
- Mix in the peas and cook for 2 to 3 minutes, stirring frequently.
- Return the pork and scrambled eggs to the skillet.
- Pour in the soy sauce, oyster sauce, and sesame oil. Toss everything together until evenly coated and heated through.
- Season with black pepper and adjust salt if needed.
- Sprinkle with sliced green onions and serve immediately.
