- 2½ pounds fresh pumpkin, peeled, seeded, and cut into chunks
- 1 medium onion, sliced
- 2 garlic cloves, peeled
- 3 cups vegetable or chicken broth
- 1 cup water
- ½ cup milk, heavy cream, or half-and-half
- 2 tablespoons butter or olive oil
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, chopped (optional, for garnish)

Directions
- Heat the butter or olive oil in a large pot over medium heat.
- Add the sliced onion and cook for 3 to 4 minutes until softened.
