Ingredients

  • 1 medium red onion, very thinly sliced
  • ½ cup water
  • ¼ cup distilled white vinegar
  • ¼ cup apple cider vinegar (or additional distilled white vinegar)
  • 1½ tablespoons maple syrup or honey
  • 1½ teaspoons fine sea salt
  • ¼ teaspoon red pepper flakes (optional)

Directions

  • Pack the thinly sliced red onion into a clean 1-pint mason jar or another heat-safe glass jar.
  • In a small saucepan, combine the water, distilled white vinegar, apple cider vinegar, maple syrup (or honey), sea salt, and red pepper flakes, if using.
  • Heat the mixture over medium heat until it reaches a gentle simmer, stirring until the salt dissolves.
  • Carefully pour the hot pickling liquid over the onions, making sure they are completely submerged.
  • Use a spoon or butter knife to press the onions into the liquid and remove any trapped air bubbles.
