Mediterranean Chicken Recipe

Ingredients
- 2 tablespoons white wine
- 2 teaspoons olive oil
- 6 skinless, boneless chicken breast halves
- 3 cloves garlic, minced
- ½ cup diced onion
- 3 cups chopped tomatoes
- ½ cup white wine
- 2 teaspoons chopped fresh thyme
- 1 tablespoon chopped fresh basil
- ½ cup Kalamata olives
- ¼ cup chopped fresh parsley
- Salt and ground black pepper, to taste
Directions
- Heat 2 tablespoons of white wine and the olive oil in a large skillet over medium heat.
- Add the chicken breasts and cook until golden brown, about 4 to 6 minutes per side. Remove the chicken from the skillet and set aside.
- Add the minced garlic to the pan drippings and sauté for about 30 seconds.
- Add the diced onion and cook until tender, about 3 minutes.
- Stir in the chopped tomatoes and bring the mixture to a boil.
- Reduce the heat to low, add ½ cup white wine, and simmer for 10 minutes.
- Add the fresh thyme and basil, then simmer for another 5 minutes.
- Return the chicken to the skillet, cover, and cook over low heat until the chicken is cooked through and no longer pink inside.
- Add the Kalamata olives and fresh parsley, then cook for 1 minute.
- Season with salt and black pepper to taste, then serve hot.
