Ingredients

  • 3 large egg yolks
  • 1 tablespoon fresh lemon juice, or more to taste
  • 4 tablespoons unsalted butter, chilled
  • ¾ cup unsalted butter, melted
  • Salt, to taste
  • Ground white pepper, to taste

Directions

  • Whisk the egg yolks in a small, heavy saucepan for about 1 minute, until they become lighter in color and slightly thickened.
  • Whisk in the lemon juice until well combined.
  • Add 2 tablespoons of the chilled butter to the egg mixture.
  • Place the saucepan over very low heat and whisk constantly until the butter melts and the mixture thickens enough to see the bottom of the pan between whisk strokes.
  • If the mixture thickens too quickly or begins to look grainy, remove the pan from the heat and whisk in 1 teaspoon of cold water.
  • Remove the saucepan from the heat.
  • Whisk in the remaining chilled butter, 1 tablespoon at a time, until the sauce is smooth.
  • Slowly whisk in the melted butter, adding a few drops at first and then gradually pouring it in a slow, steady stream while whisking continuously.
  • Continue whisking until the sauce becomes thick and smooth.
  • If the sauce is too thick, whisk in 1 teaspoon of warm water at a time until it reaches your desired consistency.
  • Season with salt and ground white pepper to taste.
  • Serve the hollandaise sauce immediately.
