Tteokbokki Recipe

Ingredients
- 350 g Korean rice cakes, separated
- 150 g Korean fish cakes, rinsed and cut into bite-sized pieces
- 2 cups Korean soup stock (dried kelp and dried anchovy stock)
- 60 g onion, thinly sliced
Tteokbokki Sauce
- 3 tablespoons gochujang (Korean chili paste)
- 1½ tablespoons raw sugar
- 1 tablespoon soy sauce
- 1 teaspoon minced garlic
- 1 teaspoon gochugaru (Korean chili flakes)
Garnish
- 1 teaspoon toasted sesame seeds
- 1 teaspoon sesame oil
- 1 stalk green onion, finely chopped
Directions
- Soak the rice cakes in warm water for 10 minutes. Skip this step if using fresh, soft rice cakes.
- In a shallow pot, bring the Korean soup stock to a boil over medium-high heat.
- Add the gochujang, sugar, soy sauce, garlic, and gochugaru. Stir until the sauce is fully dissolved into the stock.
- Add the rice cakes, fish cakes, and sliced onion.
- Cook for 3 to 5 minutes, stirring occasionally, until the rice cakes become tender.
- Reduce the heat to low and simmer for an additional 2 to 4 minutes to thicken the sauce and deepen the flavor.
- Stir in the sesame oil, sesame seeds, and chopped green onion.
- Serve immediately while hot.
