Ingredients

  • ¼ cup olive oil
  • 1 onion, finely diced
  • 1 rib celery, finely diced
  • 1 pinch salt
  • 2 (28-ounce) cans whole peeled San Marzano tomatoes
  • 4 cloves garlic, minced
  • 2 teaspoons white sugar
  • 1 teaspoon salt
  • 1 teaspoon anchovy paste
  • 1 teaspoon white wine vinegar
  • ½ teaspoon dried Italian herbs
  • 1 pinch red pepper flakes
  • 1 tablespoon tomato paste
  • 2 tablespoons chopped Italian flat-leaf parsley
  • 1 cup water, or as needed

Directions

  • Heat olive oil in a large saucepan or Dutch oven over medium-low heat.
  • Add onion, celery, and a pinch of salt. Cook until the vegetables become very soft, about 15 minutes.
  • Place the tomatoes and their juices in a bowl and crush them by hand until mostly smooth.
  • Add garlic to the cooked vegetables and sauté for about 1 minute until fragrant.
  • Stir in sugar, salt, anchovy paste, white wine vinegar, Italian herbs, and red pepper flakes.
  • Increase the heat to medium and cook until excess liquid evaporates.
  • Mix in the tomato paste until fully combined.
  • Add the crushed tomatoes and parsley, then bring the mixture to a boil.
  • Reduce the heat to low and simmer gently for about 1½ hours, stirring occasionally.
  • Add water as needed to achieve your desired consistency.
  • Remove from heat and serve with pasta, pizza, meatballs, or other favorite dishes.
