Ingredients
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 2 tablespoons paprika
- 2 teaspoons chile powder
- 1/3 cup kosher salt
- 1/3 cup coarse ground black pepper, divided
- 1 (12-14 lb) whole packer brisket, trimmed
- 1 1/2 cups beef broth
Directions
- Preheat the smoker or pellet grill to 225°F (107°C). If available, enable the Super Smoke setting for extra flavor.
- In a small bowl, combine the garlic powder, onion powder, paprika, chile powder, kosher salt, and part of the coarse black pepper to create the rub.
- Coat the brisket evenly on all sides with the seasoning mixture.
- Place the brisket on the grill grate with the fat side facing down.
- Smoke until the internal temperature reaches 160°F (71°C), about 5 to 6 hours.
- Remove the brisket from the smoker.
- Double-wrap the brisket tightly in aluminum foil and pour the beef broth into the foil packet.
- Return the wrapped brisket to the smoker.
- Continue cooking until the internal temperature reaches 204°F (96°C), approximately 3 more hours.
- Remove the brisket from the smoker and carefully unwrap it.
- Let the brisket rest for 15 minutes before slicing.
- Slice against the grain and serve.
