Ingredients

  • 1 pound pork sausage
  • 3 medium beets, peeled and shredded
  • 3 carrots, peeled and shredded
  • 3 medium potatoes, peeled and cubed
  • 1/2 head cabbage, shredded
  • 1 cup diced tomatoes, drained
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 1 can tomato paste
  • 8 3/4 cups water
  • 3 cloves garlic, minced
  • 1 teaspoon white sugar
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup sour cream
  • Fresh dill or parsley for garnish

Directions

  • Crumble the pork sausage into a skillet and cook over medium heat until browned.
  • Fill a large pot with water and bring it to a boil.
  • Add the cooked sausage to the pot.
  • Stir in the shredded beets and simmer for 10 minutes.
  • Add the carrots and potatoes and cook until the potatoes begin to soften.
  • Add the shredded cabbage and diced tomatoes to the soup.
  • Heat vegetable oil in a skillet and cook the chopped onion until tender.
