  • 1 whole chicken (about 3 pounds)
  • 4 carrots, halved
  • 4 stalks celery, halved
  • 1 large onion, halved
  • Water (enough to cover)
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon chicken bouillon granules (optional)

Directions

  • Place the chicken, carrots, celery, and onion in a large soup pot.
  • Add enough cold water to completely cover the chicken and vegetables.
  • Bring to a boil over medium heat, then reduce to low and simmer uncovered for about 90 minutes, or until the chicken meat easily falls off the bone.
  • Skim off any foam that rises to the surface while cooking.
  • Remove the chicken from the pot and allow it to cool slightly.
  • Shred the chicken into small pieces, discarding the skin and bones.
  • Strain the cooked vegetables from the broth and set them aside.
  • Rinse the soup pot, then pour the reserved broth back into it.
  • Chop the vegetables into bite-sized pieces and return them to the pot along with the shredded chicken.
