- 3 pounds yellow summer squash, cut into 1-inch cubes
- ¾ cup dry bread crumbs
- ½ cup chopped onion
- 2 large eggs
- ½ cup butter, melted
- 1 tablespoon white sugar
- 1 teaspoon salt
- ½ teaspoon black pepper
Directions
- Preheat the oven to 375°F (190°C) and grease a 2-quart baking dish.
- Place the squash in a large saucepan and cover with water.
- Bring to a boil and cook until the squash is soft, about 10 to 15 minutes.
- Drain the squash thoroughly and transfer it to a large mixing bowl.
- Mash the squash until slightly chunky.
- Stir in ½ cup bread crumbs, onion, eggs, ¼ cup melted butter, sugar, salt, and black pepper until well combined.
