Ingredients
- 2 cups shredded rotisserie chicken
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- ½ teaspoon garlic powder
- 1 teaspoon dried Italian seasoning
- ½ cup sun-dried tomatoes, chopped (with a little of their oil)
- 1 tablespoon tomato paste
- 4 cups chicken broth
- 2 cups shell pasta
- ½ cup heavy cream
- 4 ounces cream cheese
- ½ cup grated Parmesan cheese
- 2 cups fresh spinach leaves
- Fresh basil for garnish
- Salt and black pepper to taste
How to Cook
- Heat olive oil in a large pot over medium heat. Add onion and cook until soft and translucent.
- Stir in garlic, garlic powder, Italian seasoning, and tomato paste. Cook until fragrant.
- Add sun-dried tomatoes and their oil for extra flavor.
- Pour in chicken broth and bring to a simmer. Add shell pasta and cook until tender.
- Lower the heat and stir in heavy cream, cream cheese, and Parmesan until smooth.
- Add shredded chicken and spinach, letting them heat through for a few minutes.
