Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • ½ teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • ½ cup sun-dried tomatoes, chopped (with a little of their oil)
  • 1 tablespoon tomato paste
  • 4 cups chicken broth
  • 2 cups shell pasta
  • ½ cup heavy cream
  • 4 ounces cream cheese
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach leaves
  • Fresh basil for garnish
  • Salt and black pepper to taste

How to Cook

  • Heat olive oil in a large pot over medium heat. Add onion and cook until soft and translucent.
  • Stir in garlic, garlic powder, Italian seasoning, and tomato paste. Cook until fragrant.
  • Add sun-dried tomatoes and their oil for extra flavor.
