- 1 Tablespoon Salt (For Boiling)
- 2 Tablespoons Unsalted Butter, Melted
- 1 Tablespoon Olive Oil
- 3/4 Teaspoon Salt (For Sprinkling)
- 1/4 Teaspoon Black Pepper
- Finely Chopped Parsley, Optional
Directions
- Bring A Large Pot Of Water To A Boil And Add 1 Tablespoon Salt. Add Potatoes And Cook Until Fork Tender. Small Potatoes Take About 20–25 Minutes, Medium Potatoes About 30 Minutes.
- Preheat Oven To 200°C / 390°F (180°C Fan).
- Drain Potatoes And Let Them Steam Dry In A Colander For 5 Minutes.
- Place Potatoes On A Baking Tray. Using A Fork Or Potato Masher, Gently Smash Each Potato Until Flattened But Still In One Piece. Thinner Potatoes Will Be Crispier, Thicker Ones Will Have Fluffier Centers.
- Let The Smashed Potatoes Steam Dry On The Tray For Another 5 Minutes For Extra Crispiness.
- Drizzle Melted Butter Evenly Over The Potatoes, Then Drizzle With Olive Oil. Sprinkle With Salt And Black Pepper.
