Ingredients

  • 8 slices rye bread
  • ½ cup Thousand Island dressing
  • 8 slices Swiss cheese
  • 8 slices deli-style corned beef
  • 1 cup sauerkraut, drained
  • 2 tablespoons softened butter

Directions

  • Preheat a large skillet or griddle over medium heat.
  • Spread Thousand Island dressing evenly on one side of each slice of rye bread.
  • Place four slices of bread, dressing side up, on a clean surface.
  • Top each slice with one piece of Swiss cheese.
  • Add two slices of corned beef to each sandwich.
  • Divide the drained sauerkraut evenly over the corned beef.
  • Place another slice of Swiss cheese on top of the sauerkraut.
  • Cover each sandwich with the remaining bread slices, dressing side facing down.
  • Spread softened butter over the top of each sandwich.
  • Place the sandwiches butter-side down onto the hot skillet.
  • Butter the exposed side of each sandwich.
  • Grill for about 4–5 minutes until golden brown and crispy.
  • Carefully flip the sandwiches and cook for another 4–5 minutes until the second side is golden and the cheese has fully melted.
