Ingredients
- 1 pound penne pasta
- 2 tablespoons butter, divided
- 4 boneless, skinless chicken breasts, trimmed of fat and cut crosswise into 1/4-inch slices
- 2 tablespoons Cajun-style blackened seasoning
- 4 cloves garlic, chopped
- 1 large red onion, cut into wedges
- 1 green bell pepper, seeded and sliced into strips
- 1 red bell pepper, seeded and sliced into strips
- 1 yellow bell pepper, seeded and sliced into strips
- 1 teaspoon crushed red pepper flakes
- ΒΌ teaspoon curry powder
- Salt and pepper to taste
- 2 (24 ounce) jars meatless spaghetti sauce
Directions
- Bring a large pot of lightly salted water to a boil.
- Add the penne pasta and cook until tender but still slightly firm, about 8 minutes. Drain and set aside.
- In a large wok or skillet, melt 1 tablespoon of butter over medium-high heat.
- Add the chicken slices and cook until browned, stirring frequently.
- Season the chicken with the Cajun-style blackened seasoning, then remove it from the skillet and set aside.
- Melt the remaining tablespoon of butter in the same skillet.
- Add the garlic and red onion, cooking until fragrant and lightly browned.
- Stir in the green, red, and yellow bell peppers.
- Season with crushed red pepper flakes, curry powder, salt, and pepper.
- Cook and stir until the peppers are tender and heated through.
- Return the cooked chicken to the skillet.
- Pour in the meatless spaghetti sauce and stir well.
- Simmer until everything is heated through.
- Serve the sauce and chicken mixture over the cooked penne pasta.
