This homemade pumpkin pie recipe delivers the perfect holiday dessert rich, creamy, and full of warm spices. Made completely from scratch using fresh pumpkin and a flaky pie crust, this classic treat is guaranteed to impress your family and guests.

Ingredients
For the Pastry Crust:
- 1 ⅓ cups all-purpose flour
- ½ teaspoon salt
- ½ cup cold butter or shortening
- 3 tablespoons cold water (add more if needed)
For the Filling:
- 2 cups mashed, cooked pie pumpkin
- 1 (12-fluid-ounce) can evaporated milk
- 2 large eggs, beaten
- ¾ cup packed brown sugar
- ½ teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ½ teaspoon ground nutmeg
- ½ teaspoon salt
Directions
- Preheat oven to 400°F (200°C). Gather all ingredients.
- In a mixing bowl, combine flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
- Gradually add cold water, 1 tablespoon at a time, until the dough holds together.
- Shape the dough into a ball and roll it out on a lightly floured surface to about ⅛-inch thickness.
- Fit the rolled dough into a 9-inch pie pan, trimming and fluting the edges as desired.
- In another bowl, beat together pumpkin, evaporated milk, eggs, brown sugar, cinnamon, ginger, nutmeg, and salt until smooth.
- Pour the filling into the prepared crust.
- Bake for 40 to 60 minutes, or until a knife inserted near the center comes out clean. If edges brown too quickly, cover them with foil.
- Allow the pie to cool completely before slicing and serving.
