Ingredients

  • 1 pound dried pinto beans, rinsed
  • 4 cups water, or as needed
  • 2 (10 ounce) cans diced tomatoes with green chile peppers
  • 1/2 pound bacon, cut into small pieces
  • 1 yellow onion, chopped
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 1/2 teaspoons garlic powder
  • 1/2 bunch fresh cilantro, chopped
  • Salt to taste

Directions

  • Place the pinto beans in a large pot and cover with water by 2 to 3 inches.
  • Soak the beans overnight, then drain and rinse.
  • Return the beans to the pot and add fresh water to cover them.
  • Add diced tomatoes, bacon, onion, chili powder, cumin, and garlic powder.
  • Bring to a boil, then reduce heat and simmer for about 3 hours.
  • Stir occasionally and add more water if needed to keep beans covered.
  • Add chopped cilantro and salt, then continue cooking for about 1 hour until beans are tender.
