Pierogi Recipe

Ingredients
- 2 cups all-purpose flour
- ⅔ cup cold water
- 1 large egg, beaten
- 1 teaspoon salt
Potato Filling
- 5 pounds baking potatoes
- 1 pound bacon
- 1 cup shredded Cheddar cheese
- Salt and pepper to taste
Sauerkraut Filling
- ¼ pound bacon
- 1 (32 ounce) jar sauerkraut, drained, rinsed and minced
- 3 tablespoons sour cream
Directions
- In a mixing bowl, combine flour, cold water, beaten egg, and salt. Mix until a smooth dough forms. Cover and set aside.
- For the potato filling, place potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 25 to 35 minutes. Drain and mash until smooth.
- Cook the bacon for the potato filling in a skillet over medium-high heat until crisp. Drain, crumble, and stir into the mashed potatoes.
- Add shredded Cheddar cheese to the potato mixture and season with salt and pepper. Mix well and set aside.
- For the sauerkraut filling, cook the bacon until crisp, then drain and crumble it into a bowl.
- Add the drained and minced sauerkraut along with sour cream. Stir until well combined.
- Roll the dough on a lightly floured surface to a thickness of 1/8 to 1/4 inch.
- Cut the dough into 3-inch circles using a cookie cutter or the rim of a glass.
- Place a spoonful of either filling in the center of each dough circle.
- Fold the dough over the filling and firmly pinch the edges to seal.
- Bring a large pot of lightly salted water to a boil.
- Carefully drop the pierogies into the boiling water and cook until they float to the surface, about 4 to 5 minutes.
- Remove with a slotted spoon and serve warm with sour cream if desired.
