Ingredients

  • 1 cup white sugar
  • ½ cup light corn syrup
  • ¼ cup water
  • ¼ teaspoon salt
  • 1 cup peanuts
  • 2 tablespoons unsalted butter
  • 1 teaspoon baking soda

Directions

  • Prepare a large baking sheet by greasing it lightly and set it aside. Measure all ingredients in advance because the cooking process moves quickly.
  • In a heavy saucepan, add sugar, corn syrup, water, and salt, then heat over medium flame. Stir until the sugar fully dissolves and the mixture starts boiling.
  • Add peanuts to the boiling mixture and attach a candy thermometer. Continue cooking while stirring occasionally until it reaches 300 to 310°F (hard crack stage).
  • Remove the pan from heat and quickly mix in butter and baking soda until the mixture becomes light and foamy.
  • Immediately pour the hot mixture onto the prepared baking sheet and spread it evenly using a spatula or forks.
  • Allow it to cool completely at room temperature until it becomes firm and crunchy.
  • Once hardened, break the brittle into pieces and serve or store in an airtight container.
