Pancake Recipe
Begin your day with a plate of warm, fluffy pancakes golden, tender, and simply irresistible. This classic pancake recipe uses everyday ingredients you likely already have in your pantry. Whether you’re after a light and fluffy pancake recipe, an easy pancake recipe without eggs, or a simple breakfast for two, this version guarantees perfect, melt-in-your-mouth pancakes every time.

Ingredients
- 1 ½ cups all-purpose flour
- 3 ½ tsp baking powder
- 1 tbsp white sugar
- ¼ tsp salt
- 1 ¼ cups milk (or a non-dairy alternative)
- 1 egg (or ¼ cup mashed banana for an egg-free option)
- 3 tbsp melted butter (or oil for dairy-free pancakes)
- ½ tsp vanilla extract (optional, for added flavor)
Directions / How to Cook
- In a large mixing bowl, combine the flour, baking powder, sugar, and salt. Sift the dry ingredients to ensure a smooth texture.
- Create a small well in the center and pour in the milk, egg, and melted butter.
- Whisk gently until the mixture forms a smooth, lump-free batter. Avoid overmixing, as this can make the pancakes tough.
- Lightly grease a non-stick skillet or griddle and heat it over medium flame.
- Pour approximately ¼ cup of batter per pancake onto the hot surface.
- Cook for 2–3 minutes, or until small bubbles appear on the surface and the edges start to look dry.
- Flip the pancakes carefully and cook the other side for 1–2 minutes, until golden and cooked through.
- Serve immediately while warm, topped with butter, maple syrup, or fresh fruit of your choice.

Optional Variations:
- Buttermilk Pancakes: Substitute the milk with buttermilk for a richer, tangier flavor.
- Banana Pancakes: Add ½ cup mashed ripe banana to the batter for extra sweetness and moisture.
- Vegan Pancakes: Omit the egg and use plant-based milk and oil instead.
