Ingredients

  • 1/4 cup unsalted butter
  • 2 (16 ounce) packages sliced fresh mushrooms
  • 1 pinch salt
  • 1 medium yellow onion, diced
  • 1 1/2 tablespoons all-purpose flour
  • 4 cups chicken broth, or more to taste
  • 1 cup water, or more to taste
  • 6 sprigs fresh thyme, tied together
  • 2 cloves garlic, peeled
  • 1 cup heavy cream
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon fresh thyme leaves for garnish

Directions

  • Melt the butter in a large soup pot over medium-high heat.
  • Add mushrooms and a pinch of salt, cooking until the mushrooms release their juices.
  • Reduce heat to medium-low and continue cooking until the liquid evaporates and the mushrooms turn golden and caramelized.
  • Set aside a few mushroom slices for garnish if desired.
  • Add the diced onion and cook until soft and translucent.
  • Stir in the flour and cook for about 2 minutes to remove the raw taste.
  • Add chicken broth, water, thyme bundle, and garlic cloves, then simmer on low heat for 1 hour.
  • Remove and discard the thyme bundle.
  • Blend the soup in batches until smooth and creamy.
  • Return the soup to the pot, stir in the cream, and adjust thickness with broth or water if needed.
  • Season with salt and black pepper to taste.
  • Serve hot and garnish with reserved mushrooms and fresh thyme leaves.
