Marshmallow Recipe

Ingredients
- 3 cups white sugar
- ¼ cup corn syrup
- ¼ teaspoon salt
- ¾ cup water
- 2 teaspoons vanilla extract
- 1 cup confectioners’ sugar, for dusting
Directions
- Generously coat a 9×13-inch baking dish with cooking spray.
- Add the sugar, corn syrup, salt, and water to a large saucepan. Heat the mixture to 234 to 240°F (112 to 116°C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed.
- Remove the saucepan from the heat. Beat the mixture with an electric mixer until stiff peaks form, about 10 to 12 minutes.
- Stir in the vanilla extract.
- Pour the marshmallow mixture into the prepared baking dish and smooth the surface if needed.
- Refrigerate for 8 hours or overnight until fully set.
- Loosen the edges with a knife, then dust the surface generously with confectioners’ sugar.
- Turn the marshmallow slab onto a wax paper-lined surface and dust the other side with more confectioners’ sugar.
- Cut into squares and serve.
