Ingredients
- 6 small potatoes, peeled and cut into ½-inch cubes
- 7 tablespoons butter, divided
- ⅔ pound leftover cooked ham, cut into ½-inch cubes
- 1 small onion, finely chopped
- 3 tablespoons all-purpose flour
- 1 ½ cups milk
- Salt and ground black pepper, to taste
- 1 (8-ounce) package shredded Cheddar cheese
- ¼ cup bread crumbs
Directions
- Place the cubed potatoes in a large pot and cover them with salted water. Bring to a boil, then reduce the heat to medium-low and simmer for 10 to 15 minutes, or until tender.
- Meanwhile, preheat the oven to 350°F (175°C) and grease a 1 ½-quart baking dish.
- When the potatoes are nearly done, melt 3 tablespoons of butter in a skillet over medium heat. Add the leftover ham and chopped onion. Cook and stir for about 5 minutes, until the onion softens and becomes translucent.
- Drain the potatoes and add them to the ham and onion mixture. Stir gently to combine, then transfer everything to the prepared baking dish.
- Melt the remaining 4 tablespoons of butter in a saucepan over medium heat. Whisk in the flour and cook for about 5 minutes, until the mixture forms a smooth, light golden paste.
- Gradually whisk in the milk. Season with salt and black pepper, then cook and stir for about 2 minutes, until the sauce thickens.
- Reduce the heat to medium-low and stir in the shredded Cheddar cheese until completely melted and smooth.
- Pour the cheese sauce evenly over the ham and potatoes.
- Sprinkle the bread crumbs over the top.
- Bake for 25 to 30 minutes, or until the sauce is bubbling and the top is golden brown.
- Serve hot and enjoy.
