Ingredients

4 cups old-fashioned oats
1½ cups chopped pecans
1½ cups slivered almonds
1 cup coconut flakes
½ cup vegetable oil or coconut oil
⅓ cup packed brown sugar
⅓ cup honey
¼ cup maple syrup
2 teaspoons ground cinnamon
2 teaspoons vanilla extract
¾ teaspoon salt
2 cups dried cranberries (optional)

Directions

  • Preheat the oven to 325°F (165°C) and line a large rimmed baking sheet with parchment paper.
  • In a large bowl, combine oats, pecans, almonds, and coconut flakes and mix until evenly blended.
  • In a saucepan over medium heat, add oil, brown sugar, honey, maple syrup, cinnamon, vanilla, and salt, stirring gently until the mixture starts to boil.
  • Remove the syrup from heat and pour it over the oat mixture. Stir well until everything is evenly coated.
  • Spread the mixture evenly onto the prepared baking sheet in a single layer.
  • Bake for 20 minutes, remove from the oven, stir thoroughly, then return to the oven for another 5 minutes until lightly golden.
  • Let the granola cool completely on the baking sheet for 20–30 minutes so it becomes crisp.
  • Once cooled, mix in the dried cranberries if using and store in an airtight container.
