Ingredients

  • 4 medium potatoes, cut into bite-sized pieces
  • 4 slices bacon
  • 2 tablespoons white sugar
  • 1 tablespoon all-purpose flour
  • ⅓ cup water
  • ¼ cup white wine vinegar
  • ½ cup chopped green onions
  • Salt, to taste
  • Ground black pepper, to taste

Directions

  • Bring a large pot of salted water to a boil.
  • Add the potatoes and cook for 8 to 15 minutes, or until they are fork-tender.
  • Drain the potatoes and set them aside.
  • While the potatoes cook, fry the bacon in a large skillet over medium-high heat until crispy, about 8 to 10 minutes.
  • Transfer the bacon to a paper towel-lined plate, leaving the bacon drippings in the skillet.
  • Once cool enough to handle, crumble or chop the bacon into small pieces.
  • Add the sugar and flour to the bacon drippings and stir until combined.
  • Pour in the water and white wine vinegar, stirring constantly and scraping up any browned bits from the bottom of the skillet.
  • Cook the dressing over medium heat for 3 to 5 minutes, or until it thickens slightly.
  • Remove the skillet from the heat.
  • Add the cooked potatoes, crumbled bacon, and chopped green onions to the skillet.
  • Gently toss until the potatoes are evenly coated with the warm dressing.
  • Season with salt and black pepper to taste.
