Ingredients
- 2 cups heavy whipping cream
- 1ΒΌ pounds bittersweet chocolate
Directions
- Chop the bittersweet chocolate into small pieces and place it in a large stainless steel bowl.
- Heat the heavy whipping cream in a large, high-sided saucepan over medium-high heat, stirring frequently, until it just begins to boil. Watch it closely because the cream can quickly boil over.
- Immediately remove the cream from the heat and pour it over the chopped chocolate.
- Stir until the chocolate is completely melted and the mixture is smooth.
- Allow the ganache to cool completely, then store it in the refrigerator.
- For a cake glaze, use the ganache while it is still warm.
- For frosting, allow the ganache to cool until it thickens.
- For truffles, refrigerate the ganache until firm, then roll it into balls.
