Ingredients

  • 2 cups heavy whipping cream
  • 1ΒΌ pounds bittersweet chocolate

Directions

  • Chop the bittersweet chocolate into small pieces and place it in a large stainless steel bowl.
  • Heat the heavy whipping cream in a large, high-sided saucepan over medium-high heat, stirring frequently, until it just begins to boil. Watch it closely because the cream can quickly boil over.
  • Immediately remove the cream from the heat and pour it over the chopped chocolate.
  • Stir until the chocolate is completely melted and the mixture is smooth.
  • Allow the ganache to cool completely, then store it in the refrigerator.
  • For a cake glaze, use the ganache while it is still warm.
  • For frosting, allow the ganache to cool until it thickens.
  • For truffles, refrigerate the ganache until firm, then roll it into balls.
