Ingredients
- 3 cloves garlic, minced
- 2 medium scallions, thinly sliced (whites and greens separated)
- 2 tablespoons plus 1 teaspoon vegetable oil, divided
- 1 cup frozen peas and carrots (no need to thaw)
- 4 cups cold cooked white or brown rice (preferably day-old)
- 1 tablespoon soy sauce or tamari
- 1½ teaspoons kosher salt (adjust to taste)
- ¾ teaspoon ground white pepper (or black pepper as a substitute)
- 2 large eggs
- ¾ teaspoon toasted sesame oil

How to Cook Fried Rice
- Prepare the Aromatics:
Mince the garlic and slice the scallions, keeping the white and green parts separate. - Sauté the Vegetables:
Heat 2 tablespoons of vegetable oil in a large wok or frying pan over medium-high heat. Add garlic, scallion whites, peas, and carrots. Stir-fry for about 2 minutes until fragrant and tender. - Add the Rice:
Add the cold cooked rice, breaking up any clumps with your hands. Toss to combine with the vegetables, letting it heat through evenly. - Season the Rice:
