Ingredients

For the Fish

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1¼ cups very cold light beer
  • Extra all-purpose flour, for dredging
  • 1½ pounds cod, haddock, halibut, or another firm white fish, cut into 4 pieces
  • Oil, for frying

For the Chips

  • 4 large Russet potatoes, peeled and cut into thick fries
  • Oil, for frying
  • Salt, to taste
  • Malt vinegar, for serving (optional)

Directions

  • Peel and slice the potatoes into thick fries, then soak them in cold water while preparing the remaining ingredients.
  • Heat the frying oil to 325°F (163°C).
  • Drain the potatoes thoroughly and pat them dry with paper towels.
  • Fry the potatoes in small batches for 2 to 3 minutes until softened but not browned.
  • Remove the fries from the oil and let them cool while increasing the oil temperature to 375°F (190°C).
  • Fry the potatoes a second time for another 2 to 3 minutes until golden and crispy. Sprinkle with salt and keep warm.
  • In a large bowl, whisk together the flour, baking powder, and salt.
  • Slowly pour in the very cold beer and whisk until the batter is smooth.
  • Lightly coat each fish fillet with extra flour, shaking off any excess.
  • Dip the fish into the beer batter, making sure each piece is fully coated.
  • Carefully lower the battered fish into the hot oil.
  • Fry for 5 to 8 minutes, or until the coating is crisp and golden and the fish is fully cooked.
  • Transfer the fish to a paper towel-lined plate to drain any excess oil.
  • Serve the crispy fish immediately with the hot chips and malt vinegar, if desired.
