Ingredients

4 (6 ounce) filet mignon steaks
Seasoned salt to taste
Cracked black pepper to taste
1/4 cup extra virgin olive oil
1/4 cup balsamic vinegar
1 tablespoon Dijon mustard
2 teaspoons dried rosemary
1 tablespoon unsalted butter
2 cups sliced onions
1 teaspoon white sugar
4 ounces blue cheese, crumbled

Directions

  • Season the filet mignon steaks with seasoned salt and cracked black pepper. Place them in a large dish in a single layer.
  • In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, and dried rosemary. Pour the mixture over the steaks and turn them so they are evenly coated. Allow the steaks to marinate for about 30 minutes.
  • While the steaks are marinating, melt butter in a skillet over medium heat. Add the sliced onions and cook until they begin to soften. Stir in the sugar and continue cooking until the onions become golden and caramelized. Set the onions aside.
  • Preheat a grill to medium-high heat and lightly oil the grate. Place the steaks on the hot side of the grill and cook for about 10 minutes, turning once during cooking.
  • When the steaks are nearly done, move them to a slightly cooler part of the grill. Top each steak with caramelized onions and crumbled blue cheese. Close the grill lid and cook briefly until the cheese begins to melt.
  • Remove the steaks from the grill and serve warm.
