Ingredients
- 1 cup milk
- 2 tablespoons white sugar
- 1 cup warm water
- 1 package active dry yeast
- 6 cups all-purpose flour
- ¼ cup melted shortening
- 1 teaspoon salt
- ¼ cup cornmeal
Directions
- Warm the milk in a saucepan until small bubbles appear around the edges.
- Remove from heat and stir in sugar until dissolved.
- Allow the milk mixture to cool until lukewarm.
- In a small bowl, combine warm water and yeast.
- Let the yeast mixture stand for about 10 minutes until creamy.
- In a large bowl, combine the milk mixture, yeast mixture, 3 cups flour, and melted shortening.
- Beat until smooth.
- Add salt and the remaining flour gradually to form a soft dough.
- Knead the dough until smooth and soft.
- Place dough in a greased bowl, cover, and let rise for about 1 hour until doubled in size.
- Punch down the dough and roll it out on a lightly floured surface to about ½-inch thickness.
- Cut out rounds using a biscuit cutter or glass.
- Sprinkle cornmeal onto a surface and place dough rounds on top.
- Dust the tops with additional cornmeal.
- Cover and let rise for another 30 minutes.
- Heat a greased griddle over medium heat.
- Cook muffins for about 10 minutes on each side until golden brown.
- Split and toast before serving if desired.
