Ingredients
- 1/3 cup avocado oil or vegetable oil
- 1/3 cup seasoned rice vinegar
- Juice of 1 lime
- 3 cloves garlic, minced
- 1/4 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 1/4 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chipotle pepper powder
- 2/3 cup finely diced red onion
- 1 1/2 cups diced bell peppers
- 1/3 cup diced roasted red peppers
- 1/3 cup diced pickled jalapeƱos
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can black-eyed peas, drained and rinsed
- 2 cups corn kernels
- 1 cup diced fresh tomatoes
- 1/2 cup chopped fresh cilantro
- Tortilla chips for serving
Directions
- In a large bowl, whisk together the avocado oil, rice vinegar, lime juice, minced garlic, garlic powder, salt, sugar, cumin, smoked paprika, and chipotle pepper until well combined.
- Rinse the diced red onion under cold water and drain well.
- Add the bell peppers, roasted red peppers, jalapeƱos, black beans, black-eyed peas, corn, and tomatoes into the bowl with the dressing.
- Add the diced red onion and mix everything together until evenly coated.
- Cover the bowl and refrigerate for at least 2 hours so the flavors can blend.
- Stir the mixture occasionally while chilling.
- Before serving, mix in the chopped cilantro and adjust seasoning if needed.
- Serve chilled with tortilla chips.
