Ingredients
- 1 pound large shrimp, peeled and deveined
- 1/3 cup cornstarch
- 1 teaspoon salt
- 3/4 teaspoon cayenne pepper
- 2 cups flaked sweetened coconut
- 3 egg whites
Directions
- Preheat the oven to 400°F (200°C). Lightly coat a baking sheet with cooking spray.
- Rinse the shrimp and pat them completely dry with paper towels.
- Combine the cornstarch, salt, and cayenne pepper in a shallow bowl.
- Place the flaked coconut in a separate shallow bowl.
- Beat the egg whites in a third shallow bowl until foamy.
- Dredge each shrimp in the cornstarch mixture, shaking off any excess.
- Dip the shrimp into the beaten egg whites, allowing the excess to drip back into the bowl.
- Press each shrimp into the coconut, making sure it is completely coated.
- Arrange the coated shrimp in a single layer on the prepared baking sheet.
- Bake for 15 to 20 minutes, flipping the shrimp halfway through, until the shrimp are bright pink and opaque and the coconut is golden brown.
