Ingredients

1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon salt
1 teaspoon black pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1 1/2 pounds skinless boneless chicken breast, cut into strips
4 tablespoons olive oil
2 bell peppers, sliced
1 onion, thinly sliced
8 flour tortillas

Directions

  • In a small bowl, mix chili powder, cumin, paprika, salt, black pepper, cayenne pepper, and garlic powder to create the fajita seasoning.
  • Place the chicken strips in a large bowl. Add two tablespoons of olive oil and sprinkle most of the seasoning over the chicken. Toss until the chicken is evenly coated. Cover the bowl and refrigerate for several hours so the flavors can develop.
  • Remove the chicken from the refrigerator about one hour before cooking so it reaches room temperature.
  • Heat a large skillet over medium heat and add the remaining olive oil. Add the sliced peppers and onion and cook while stirring occasionally until the vegetables become soft and slightly tender.
