Chicken Chili Recipe

Ingredients
- 2 cups shredded chicken or turkey
- 1 tablespoon olive oil or avocado oil
- 1 sweet onion, diced
- 1 red bell pepper, chopped
- 3 garlic cloves, minced
- 15 ounces diced tomatoes (1 can)
- 2 cups chicken or turkey broth
- 1 (15-ounce) can black beans, rinsed and drained
- 1½ cups frozen sweet corn (or 15-ounce can), rinsed and drained
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- ½ teaspoon chili flakes
- Sea salt and freshly ground black pepper, to taste
Optional Toppings: Shredded cheese, avocado, tortilla chips, cilantro, sour cream, Greek yogurt, sliced jalapeño
Directions
- Heat the olive oil in a large pot over medium-high heat.
- Add the diced onion, chopped bell pepper, and minced garlic. Sauté for 5–7 minutes, stirring occasionally, until the vegetables are soft and fragrant.
- Stir in the black beans, corn, diced tomatoes, chicken or turkey broth, and shredded chicken. Add chili powder, cumin, oregano, and chili flakes, mixing until well combined.
- Reduce the heat to low and let the chili simmer for 15–20 minutes, stirring occasionally, until it thickens and the flavors meld together.
- Taste and season with sea salt and freshly ground black pepper as needed.
