- 1 pound boneless skinless chicken thighs, cut into ¾-inch pieces
- 3 tablespoons cornstarch, divided
- ¾ cup thinly sliced onion
- 4 garlic cloves, thinly sliced
- 2 teaspoons minced fresh ginger
- 5 cups broccoli florets
- ¾ cup water
- ¼ cup soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon light brown sugar
- ¼ teaspoon crushed red pepper flakes, or to taste
- ¼ teaspoon freshly ground black pepper
Directions
- Heat canola oil in a large skillet over medium-high heat until hot.
- Toss the chicken pieces with 1 tablespoon cornstarch in a bowl until the chicken is evenly coated.
- Add the chicken to the skillet in a single layer and cook, stirring occasionally, until the chicken becomes crisp and fully cooked, about 6 minutes.
- Add the sliced onion and cook for about 1 minute until slightly softened.
- Stir in the garlic and minced ginger and cook for another minute until fragrant.
- Transfer the cooked chicken mixture to a plate and set aside.
- In the same skillet, add the broccoli florets and cook over medium-high heat while stirring occasionally for 2 to 3 minutes until bright green and tender.
- In a small bowl, whisk together water, soy sauce, oyster sauce, brown sugar, crushed red pepper flakes, black pepper, and the remaining 2 tablespoons cornstarch until smooth.
- Return the chicken mixture to the skillet with the broccoli.
- Pour the prepared sauce into the skillet and cook while stirring continuously until the sauce thickens and coats the chicken and broccoli, about 2 minutes.
- Serve the chicken and broccoli immediately with rice if desired.
