Ceviche Recipe
Ceviche is a cool, zesty, and refreshing seafood dish made by marinating shrimp in citrus juice until firm and tender no heat required. This vibrant version combines juicy shrimp with crisp vegetables, fresh cilantro, and jalapeño for a perfect balance of brightness and heat. It’s an ideal appetizer for warm days, parties, or enjoying with crunchy tortilla chips.

Ingredients
- 1 pound jumbo shrimp, peeled and deveined
- Juice of 5 large lemons (or enough to fully cover shrimp)
- 2 white onions, finely chopped
- 1 large tomato, seeded and chopped
- 1 cucumber, peeled and finely chopped
- 1 bunch radishes, finely diced
- 2 cloves garlic, minced
- 3 fresh jalapeño peppers, seeded and minced
- ¼ cup chopped fresh cilantro
- Tomato & clam juice cocktail (as needed)
- Tortilla chips (optional, for serving)
Directions
- Place the shrimp in a bowl. Chop into chunks or keep whole, depending on your preference.
- Pour in enough lemon juice to fully submerge the shrimp. Cover and chill for about 30 minutes, until the shrimp turn opaque.
- Stir in the onions, tomato, cucumber, radishes, and garlic.
- Add jalapeño and cilantro little by little to adjust the heat and flavor.
- Pour in tomato and clam juice cocktail until the mixture reaches the consistency you like.
- Cover once more and refrigerate for 1 hour to let the flavors fully develop.
- Serve cold, with tortilla chips if desired.
