Candied Yams Recipe

Ingredients
For the yams
- 3 tablespoons kosher salt
- 2 quarts cold water
- 3 pounds orange-fleshed sweet potatoes, peeled and cut into 2-inch pieces
For the glaze
- 1 cup brown sugar
- 4 tablespoons unsalted butter
- ½ cup freshly squeezed lemon juice
- ¼ cup maple syrup
- ½ teaspoon ground ginger
- ¼ teaspoon ground cinnamon
- 1 pinch cayenne pepper
- Salt to taste
For garnish
- Chopped pistachios, pecans, or walnuts
Directions
- Fill a large pot with 2 quarts of cold water and stir in the kosher salt until dissolved. Add the sweet potato pieces.
- Place the pot over high heat and bring to a gentle simmer, then reduce the heat to medium-low. Cook for 5–7 minutes, until the potatoes are partially tender but not fully soft. Test with a knife they should pierce easily without falling apart. Drain and set aside.
- In a wide skillet, combine the brown sugar, butter, lemon juice, maple syrup, ginger, cinnamon, cayenne pepper, and a small pinch of salt. Place over medium-high heat and stir continuously as the butter melts and the mixture begins to bubble. Cook for 4–6 minutes, stirring occasionally, until the glaze thickens slightly and becomes glossy.
- Add the drained sweet potatoes to the skillet and increase heat to high. Gently stir to coat the yams evenly with the glaze. Cook for 5–8 minutes, stirring carefully so the potatoes stay intact. The glaze will thicken further as the sweet potatoes become fully tender.
- Remove the skillet from heat and transfer the candied yams to a serving dish. Sprinkle with chopped nuts for added texture and flavor. Serve warm.
