Ingredients
Muffins:
- 1 ½ cups all-purpose flour

- 2 teaspoons baking powder

- ⅓ cup vegetable oil
- 1 large egg
- ⅓ cup milk (or more as needed)
- 1 cup fresh blueberries
Crumb Topping:
- ½ cup white sugar
- ⅓ cup all-purpose flour
- ¼ cup butter, cubed
- 1 ½ teaspoons ground cinnamon
Directions
- Preheat oven to 400°F (200°C). Grease 8 muffin cups or line with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a small measuring cup, combine oil, egg, and enough milk to make 1 cup of liquid. Mix well.
- Pour wet mixture into dry ingredients and stir until just combined do not overmix.
- Gently fold in the blueberries.
- For the crumb topping, mix sugar, flour, butter, and cinnamon with a fork until crumbly.
- Spoon batter into prepared muffin cups, filling to the top. Sprinkle generously with crumb topping.
- Bake for 20–25 minutes or until a toothpick inserted in the center comes out clean.
- Cool slightly before serving.
