Ingredients
Blueberry Filling
- 2½ cups fresh blueberries or frozen blueberries, thawed
- Juice of ½ lemon
- 1 teaspoon vanilla extract
- 1 cup granulated sugar
- ½ teaspoon all-purpose flour
- 1 tablespoon melted butter
Cobbler Topping
- 1¾ cups all-purpose flour
- 4 teaspoons baking powder
- 6 tablespoons granulated sugar
- 5 tablespoons cold butter
- 1 cup milk
- 2 teaspoons granulated sugar
- 1 pinch ground cinnamon
Directions
- Preheat the oven to 375°F (190°C) and lightly grease an 8-inch square baking dish.
- Add the blueberries to the prepared baking dish. Stir in the lemon juice, vanilla extract, 1 cup sugar, ½ teaspoon flour, and melted butter until the berries are evenly coated.
- In a separate bowl, whisk together the flour, baking powder, and 6 tablespoons sugar.
- Cut the cold butter into the flour mixture until it resembles coarse crumbs.
- Pour in the milk and stir just until a thick batter forms. Let the batter rest for 10 minutes.
- Spoon the batter evenly over the blueberry filling, leaving a few small gaps so some berries remain visible.
- Mix the remaining 2 teaspoons sugar with the cinnamon and sprinkle it evenly over the topping.
- Bake for 25 to 35 minutes, or until the topping is golden brown and a toothpick inserted into the center comes out clean.
- Let the cobbler cool for about 10 minutes before serving. Enjoy warm with whipped cream or a scoop of vanilla ice cream if desired.
