Ingredients

  • ⅓ cup oyster sauce
  • ⅓ cup sherry
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon soy sauce
  • 1 teaspoon white sugar
  • 1 teaspoon cornstarch
  • ¾ pound beef round steak, sliced thin
  • 3 tablespoons vegetable oil
  • 1 thin slice fresh ginger
  • 1 garlic clove, peeled and smashed
  • 1 pound broccoli florets

Directions

  • Whisk together the oyster sauce, sherry, sesame oil, soy sauce, sugar, and cornstarch until smooth.
  • Add the sliced beef to the marinade, mix to coat, cover, and refrigerate for at least 30 minutes.
  • Heat the vegetable oil in a wok over medium-high heat. Add the ginger and garlic; let them sizzle for about 1 minute, then remove and discard.
  • Add the broccoli and stir-fry for 5–7 minutes until it becomes bright green and nearly tender. Transfer to a plate and set aside.
  • Add a bit more oil if needed, then add the marinated beef. Stir-fry until the meat is no longer pink and the sauce starts to thicken.
  • Return the broccoli to the wok and toss everything together until heated through.
  • Serve hot over rice.
