Ingredients
- 2 pounds bacon, cut into 1-inch pieces
- 1/2 cup bacon drippings
- 2 large yellow onions, thinly sliced
- 1/2 cup brown sugar
- 1/4 cup minced garlic
- 1 teaspoon ground cayenne pepper
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup bourbon whiskey
- 1 cup brewed coffee
- 1/2 cup sherry vinegar
- 1/2 cup maple syrup
- 3/4 cup ketchup
Directions
- Cook the bacon in a large saucepan over medium-high heat for about 10 minutes, stirring occasionally, until it begins to brown.
- Drain the excess bacon grease, reserving about 1/4 cup of the drippings in the pan.
- Add the thinly sliced onions to the bacon and reserved drippings. Cook for about 10 minutes, stirring occasionally, until the onions become soft.
- Stir in the brown sugar and continue cooking for about 5 minutes, until the onions become sticky and caramelized.
- Add the minced garlic, cayenne pepper, cinnamon, and nutmeg. Cook for another 5 minutes, stirring frequently, until the garlic is softened and fragrant.
- Pour in the bourbon, brewed coffee, sherry vinegar, and maple syrup. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low.
- Cook for about 35 minutes, stirring occasionally to prevent the mixture from sticking or burning. Continue cooking until the bacon jam becomes thick but is not completely dry.
- Stir in the ketchup and cook for another 5 minutes.
- Remove the pan from the heat and allow the bacon jam to cool slightly.
- Transfer the mixture to a food processor and pulse until it reaches a slightly chunky, spreadable consistency.
- Serve the bacon jam on burgers, biscuits, eggs, toasted bread, crackers, or your favorite sandwiches.
