1 ½ cups white sugar, divided
12 egg whites
1 ½ teaspoons vanilla extract
1 ½ teaspoons cream of tartar
½ teaspoon salt

Directions

  • Preheat the oven to 375°F (190°C). Make sure a 10-inch tube pan is completely clean and dry.
  • Sift the cake flour together with ¾ cup of the sugar and set it aside.
  • In a large bowl, beat the egg whites with vanilla extract, cream of tartar, and salt until medium peaks begin to form. Gradually add the remaining ¾ cup sugar while continuing to beat until stiff peaks develop.
  • Gently fold the sifted flour mixture into the egg white mixture in three additions. Mix carefully so the batter keeps its airy texture.
  • Transfer the batter into the tube pan and smooth the top.
