Ingredients

  • 14 quarts water
  • 2 whole chickens, about 5 pounds each, skinned and trimmed of fat
  • 4 pounds carrots, cut into chunks
  • 3 pounds celery, cut into chunks
  • 3 large sweet onions, cut into chunks
  • 6 leeks, trimmed and chopped
  • 14 tablespoons sea salt
  • 3 tablespoons chopped garlic
  • 3 tablespoons garlic powder
  • 2 tablespoons crushed dried rosemary
  • 2 tablespoons dried parsley
  • 1 tablespoon dried thyme
  • 1 bunch fresh parsley, chopped (optional)

Directions

  • Add the water, whole chickens, carrots, celery, onions, leeks, sea salt, garlic, garlic powder, rosemary, dried parsley, and dried thyme to a large stockpot.
  • Partially cover the pot with a lid and bring the mixture to a boil.
  • Reduce the heat and let the broth simmer for about 2 hours, or until the chicken is fully cooked and falling off the bone.
  • Carefully remove the chicken from the pot.
  • Stir in the fresh parsley, if using, and cook for 2 to 3 minutes until wilted.
  • Remove the broth from the heat and allow it to cool slightly.
  • Strain the broth into freezer-safe containers, using 2- to 4-cup portions for convenient storage.
  • Use the chicken broth immediately or freeze it for later.
  • If using frozen broth, thaw it in the refrigerator or microwave, or place it directly in a pot and thaw it gently on the stovetop.
