Challah Recipe
Challah is a soft, slightly sweet, beautifully braided bread with a tender, fluffy interior and a glossy golden crust. Ingredients
- 1 ½ packages active dry yeast (about 3 ½ teaspoons)
- ½ cup plus 1 tablespoon sugar
- ½ cup vegetable oil, plus more for greasing
- 5 large eggs
- 1 tablespoon salt
- 8 to 8 ½ cups all-purpose flour
- 1 ¾ cups lukewarm water
- Poppy or sesame seeds, for sprinkling
Directions
- In a large bowl, dissolve the active dry yeast and 1 tablespoon of sugar in the lukewarm water. Let the mixture sit until the yeast begins to activate.
- Whisk the vegetable oil into the yeast mixture, then add 4 eggs one at a time. Mix in the remaining sugar and salt.
- Gradually add the flour, mixing until a soft dough forms and begins to hold together.
- Transfer the dough to a lightly floured surface and knead until smooth and elastic.
- Grease a clean bowl, place the dough inside, and cover it. Let it rise in a warm place for about 1 hour, or until nearly doubled in size.
- Punch down the dough, cover it again, and let it rise for another 30 minutes.
- Divide the dough in half. For each loaf, divide one portion into 6 equal pieces and roll each piece into a long strand.
- Arrange the six strands side by side and braid them into a loaf. Tuck the ends underneath. For a round challah, shape the braid into a circle and pinch the ends together.
- Place both braided loaves on a greased baking sheet, leaving space between them.
- Beat the remaining egg and brush it over the loaves. Let them rise for about 1 hour.
- Preheat the oven to 375°F (190°C).
- Brush the loaves with egg wash again and sprinkle with poppy or sesame seeds.
- Bake for 35 to 40 minutes, or until the challah is golden brown and cooked through.
- Transfer the loaves to a wire rack and let them cool before slicing and serving.
