Ingredients
- 1 pound fresh fruit (strawberries, grapes, mandarin segments, kiwi, or watermelon cubes)
- 3 cups granulated white sugar
- 1½ cups water
- Ice water (for setting the candy coating)
Directions
- Wash the fruit thoroughly and pat it completely dry with paper towels. Moisture can prevent the sugar coating from sticking.
- Thread 1 to 3 pieces of fruit onto each wooden skewer.
- Fill a large bowl with ice water and set it aside.
- Add the granulated sugar and water to a medium stainless-steel saucepan.
- Place the pan over medium heat and allow the mixture to cook without stirring.
- Continue cooking until the syrup reaches 300°F (150°C) on a candy thermometer, about 15 to 20 minutes.
- Carefully dip each fruit skewer into the hot sugar syrup, turning it to coat all sides evenly.
- Immediately transfer the coated fruit into the bowl of ice water for a few seconds to harden the candy shell.
- Remove the skewers from the water and place them on a parchment-lined tray or plate.
- Serve immediately while the sugar coating is crisp and crunchy.
