- 1 cup chicken broth
- 2 teaspoons soy sauce
- 2 teaspoons fish sauce (optional)
- 1 tablespoon rice vinegar
- Salt, to taste
- Freshly ground black pepper, to taste
For the Poutine
- 2 pounds frozen thick-cut French fries or homemade fries
- 12 ounces white cheddar cheese curds
- Chopped fresh parsley (optional, for garnish)
Directions
- Bake or fry the French fries according to the package instructions or prepare homemade fries until golden and crispy.
- While the fries cook, melt the butter in a medium saucepan over medium heat.
- Whisk in the flour and cook for about 2 minutes until lightly golden, stirring constantly.
- Slowly whisk in the beef broth and chicken broth until smooth.
- Stir in the soy sauce, fish sauce, and rice vinegar.
- Bring the gravy to a gentle boil, then reduce the heat and simmer for 10 to 15 minutes until slightly thickened.
- Season with salt and black pepper to taste.
- Place the hot crispy fries onto a serving platter or individual plates.
- Scatter the cheese curds evenly over the fries while they’re still hot.
- Ladle the hot gravy generously over the fries and cheese curds so the curds soften slightly without completely melting.
