Ingredients

  • 4 large eggs, at room temperature
  • 1½ cups whole milk, warmed
  • 1½ cups all-purpose flour
  • ¾ teaspoon salt
  • 3 tablespoons unsalted butter, melted and slightly cooled
  • Nonstick cooking spray or butter for greasing the pan

Directions

  • Let the eggs come to room temperature and warm the milk slightly before starting.
  • Preheat the oven to 450°F (230°C). Position the oven rack in the lower third of the oven.
  • Place a popover pan in the oven for 2 to 3 minutes until hot.
  • In a blender or mixing bowl, combine the eggs, warm milk, and salt until well blended.
  • Add the flour and mix until the batter is completely smooth with no lumps.
