Ingredients
- 12 ounces jalapeno peppers, halved lengthwise and seeded
- 12 ounces cream cheese, softened
- 8 ounces shredded Cheddar cheese
- 1 tablespoon bacon bits
- 1 cup all-purpose flour
- 1 cup milk
- 1 cup dry bread crumbs
- 2 quarts vegetable oil, for frying
Directions
- Slice the jalapeno peppers in half lengthwise and remove the seeds and membranes. Wear gloves while handling the peppers if possible.
- In a medium bowl, combine the softened cream cheese, shredded Cheddar cheese, and bacon bits until smooth.
- Spoon the cheese mixture evenly into each jalapeno half.
- Place the milk, flour, and breadcrumbs into three separate shallow bowls.
- Dip each stuffed jalapeno into the milk, then coat with flour. Place on a tray and let rest for 10 minutes.
- Dip the floured jalapenos back into the milk, then coat thoroughly with breadcrumbs. Repeat the milk and breadcrumb coating one more time for an extra crispy crust.
- Allow the coated jalapenos to rest for another 10 minutes.
- Heat the vegetable oil to 365°F (180°C) in a deep fryer or heavy pot.
- Fry the jalapeno poppers in small batches for 2 to 3 minutes, or until golden brown and crispy.
- Remove with a slotted spoon and drain on paper towels.
- Serve immediately with ranch dressing, garlic aioli, or your favorite dipping sauce.
