Japchae Recipe
This easy Japchae recipe is a delicious Korean noodle dish made with chewy sweet potato glass noodles, colorful vegetables, tender beef, and a savory-sweet sesame soy sauce. Ingredients
- 8 ounces sweet potato glass noodles
- 8 ounces thinly sliced beef
- 6 ounces fresh spinach
- 1 small sweet onion, thinly sliced
- 4 mushrooms, sliced
- 1 small carrot, cut into thin matchsticks
- 1 tablespoon vegetable oil, divided
- Salt and ground black pepper, to taste
Japchae Sauce
- 3 tablespoons soy sauce
- 2 ½ tablespoons granulated sugar
- 2 tablespoons sesame oil
- 2 teaspoons minced garlic
Directions
- Whisk the soy sauce, sugar, sesame oil, and minced garlic together in a small bowl until the sugar dissolves. Set the Japchae sauce aside.
- Bring a large pot of lightly salted water to a boil. Add the sweet potato glass noodles and cook until tender but still slightly chewy, about 6 to 7 minutes.
- Drain the noodles and rinse them under cold water. Toss them with 2 tablespoons of the prepared sauce and set aside.
- Bring another pot of water to a boil. Add the spinach and cook for about 1 minute, until just wilted. Drain, rinse with cold water, squeeze out excess water, and season with salt and pepper.
- Heat 1 teaspoon of vegetable oil in a large skillet over medium-high heat. Add the sliced onion and cook for 1 to 2 minutes until fragrant but still slightly crisp. Transfer to a large bowl.
- Add another teaspoon of oil to the skillet. Cook the mushrooms for 1 to 2 minutes until lightly browned, then transfer them to the bowl with the onion.
- Add the remaining oil to the skillet and cook the carrot strips for 1 to 2 minutes until slightly tender but still crisp. Transfer them to the bowl.
- Add the sliced beef and cook until browned and fully cooked, about 1 to 2 minutes. Transfer the beef to the bowl with the vegetables.
- Add the cooked glass noodles to the skillet and stir for 1 to 2 minutes until heated through.
- Return the beef and vegetables to the skillet. Pour in the remaining Japchae sauce and toss everything together until evenly coated.
- Serve the Japchae warm and enjoy.
